Blueberry Crunch Pancakes

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup whole-wheat flour
  • 1/2 cup oatmeal
  • 1/3 cup oatmeal
  • 2 tablespoons sugar
  • 1 cup blueberries
  • 1/4 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 1/4 cups buttermilk
  • 2 large eggs, slightly beaten
  • 2 tablespoons oil
  • 1/4 cup chopped almonds

Instructions:

  1. In a bowl, combine flours, 1/3 cup oatmeal, sugar, baking powder, salt and 1 tsp cinnamon.
  2. In a seperate bowl, combine buttermilk, eggs and oil.
  3. Combine and stir into dry ingredients until blended.
  4. Fold in blueberries —
  5. Mix together remaining oatmeal and cinnamon.blend in almonds and brown sugar.
  6. Sprinkle about 1 tsp toppping for each pancake on lightly greased griddle.
  7. Pour 1/4 cup batter over topping.
  8. Immediately sprinkle with another 1 tsp topping —
  9. Turn when bubbles form on top of pancakes.cook till second side is golden brown.
