- 2/3 cup pineapple juice
- 2 teaspoons cornstarch
- 2 teaspoons sugar
- 1/8 teaspoon coconut extract
- In a small saucepan, combine pineapple juice, cornstarch and sugar, mixing well to dissolve
- Cook over medium heat, stirring constantly, until mixture comes to a boil.
- Boil 1 minute, stirring.
- Remove from heat and stir in coconut extract.
- Serve warm.
