Recipe For Broiled Chicken

Skinless chicken pieces in a citrus-based marinade grilled with a mild BBQ baste.


  • 1 whole chicken, cut into 8 pieces


  • 1 cup water
  • 1 cup apple juice
  • 1 cup V-8 juice
  • 1 tablespoon lemon juice
  • 1/2 cup pineapple juice
  • 1 cup chopped onion
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper


  • 2 1/4 tablespoons vegetable oil
  • 1/2 cup roughly chopped onions
  • 1 can (10 oz) tomato puree
  • 1/4 cup water
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt dash ground black pepper
  • 1 garlic clove, minced


1. Using your hands and a sharp knive, carefully remove the skin from the chicken pieces.

2. Prepare marinade: In non-reactive bowl, combine marinade ingredients.

3. Add chicken to marinade, turn to coat, cover and refrigerate at least 24 hours. Turn chicken pieces occasionally.

4. Prepare baste: In skillet, heat 1 teaspoon oil; add onions and saute until they begin to blacken a bit; transfer to medium saucepan and add remaining baste ingredients. Bring mixture to a full boil; reduce heat; simmer 5 to 7 minutes. Remove from heat and cool; cover and refrigerate until ready to use.

5. When ready to cook, remove chicken from marinade; discard marinade.

6. Grill chicken for a few minutes; brush with baste and continue to grill for several minutes; turn and baste other side and continue to grill until cooked through.

Serves 6-8
