Vegetable Frittata Muffins

Ingredients:

  1. 1 cup zucchini, sliced and halved
  2. 1 cup mushrooms
  3. 3/4 cup green bell peppers, chopped
  4. 3/4 cup onions, chopped
  5. 1 garlic clove, minced
  6. 3 tablespoons olive oil
  7. 6 eggs
  8. 1/4 cup cream (I use half and half)
  9. 1 lb cream cheese
  10. 2 cups cubed white bread, crusts removed
  11. 1 1/2 cups grated sharp cheddar cheese
  12. 1/2 teaspoon salt
  13. 1/2 teaspoon pepper

Instructions:

  1. Saute zucchini, mushrooms, bell pepper, onion, and garlic in oil until soft. Cool.
  2. Preheat oven to 350º.
  3. Beat eggs and cream together in a large bowl.
  4. Add cream cheese in small bits. Add bread, cheddar, and cooled vegetables.
  5. Add salt and pepper.
  6. Pour mixture into a well buttered 10 inch springform pan.
  7. Bake 55 minutes.
  8. Let stand 10-15 minutes before serving.
